Mattson is North America’s most successful food and beverage design and development firm. Since 1977, we have worked with clients large (i.e. Kraft Foodservice, Nestle Professional, McDonalds, Starbucks, Taco Bell, Pepsico Foodservice) and small (Peet’s, Argo Tea Cafés, Taco Bueno, White Castle) to help them identify new business, product, and menu opportunities, formulate the early prototypes, develop the naming/branding, positioning, and packaging, test them with consumers, commercialize the winning products in contract manufacturing plants or in our clients’ own facilities, and assist in the field roll-out.
We are a 65+ person, employee-owned company that operates at a lightning-fast pace, which allows our clients to be smarter and quicker in getting new products and menu platforms to market. We provide hands-on resources to our clients, but more importantly, we provide expertise, insight, and award-winning creativity across food categories, segments, and channels. Our single location in the San Francisco Bay Area houses a 20,000 square foot food development lab, brand development studio, consumer research facility, and an on-site pilot manufacturing plant. Mattson is located in Foster City, CA.

We are seeking an experienced Commercialization Manager with an in depth knowledge of food science and technology as well as diverse experience in product development and commercialization. Candidate must have the ability to formulate and scale-up a wide variety of food and beverage products, possess strong project management skills, independently manage multiple projects, and work effectively with cross-functional teams.

Product and Process Development
  • Lead commercialization of Mattson developed products from pilot plant to scale-up at a wide range of client plants and contract manufacturers
  • Serve as a “Subject Matter Expert” on a wide variety of food manufacturing unit operations and technologies; guide product developers in use of these technologies and processes
  • Identify and qualify contract manufacturers for specific project needs, and conduct site assessments
  • Troubleshoot technical, formulation and processing issues during pilot plant and factory runs
  • Develop new products throughout all phases of product development – from initial bench development to commercial launch
  • Solve complex technical problems related to the development, manufacturing, and/or improvement of food products and processes
  • Conduct independent technical research for these projects
  • Proactively identify development approaches and contingency plans for product scale-up challenges
  • Create and execute experimental designs (as needed), conduct data analysis and provide interpretation and technical recommendations
  • Simultaneous involvement in multiple projects
  • Source ingredients, generate formula costing, use software to prepare nutritional analysis
  • Conduct and write up shelf life studies
  • Travel as required by clients and project needs with minimal advanced notice
  • Ability to lift 30 to 40 lbs.
Food Safety/Sanitation and Compliance
  • Work collaboratively to ensure that all projects and activities meet/support Federal Standards for GMP, HACCP and FSMA
  • Oversee required documentation and records related to QA/QC, sanitation programs/procedures including food safety plans and preventative controls for Pilot Plant
  • Implement, maintain and enforces Food Safety/Sanitation policies and procedures in other food related areas of the facility (Food Service Pilot Plant, Laboratory)
  • Assist or lead internal Mattson projects as assigned by management – e.g. continuous improvement of pilot plant and facility operations; designing future Mattson lab and pilot plant spaces
Professionalism and Leadership
  • Provide mentorship to technical team as needed throughout development process/scale up to continue to build internal expertise
  • Work closely with all employees to deliver excellent client support
  • Communicate effectively with cross functional teams
  • Assist in the presentation of products and projects to clients

QUALIFICATIONS (Please read carefully before applying)
  • B.S. or M.S in Food Science or related discipline
  • 7+ years of food or beverage commercialization experience with experience across multiple technologies and product types
  • 5+ years of product development experience
  • Excellent computer, written and verbal communication skills
  • Strong documentation, organization and time management skills
  • Project management experience
  • Culinary exposure
  • Plant/Pilot plant management
  • Quality Assurance experience
